Pimenta / Chilli Pepper

Tem uma pimenta grande! Mas que está demorando muito pra ficar vermelha. Será que vai acontecer algum dia? É esperar pra ver! Enquanto isso vou imaginando um prato especial para ela! 
There's a big chilli pepper! But is taking quite a lot to become red. Is it going to happen one day? Let's wait and see! Meanwhile I'm imagining a special dish to use it!

Almoço de domingo: Paella / Sunday lunch: Paella


Estava planejando fazer um churrasco mas, como a previsão do tempo era de chuva em Londres, o plano B entrou logo em ação: Paella.
Como nunca tinha feito este prato, fiz uma busca de receitas para tentar usar uma que gostasse. Descobri que a  Paella pode sr preparada de várias maneiras, variando bastante os ingredientes. Por aqui optei por fazer a de frutos do mar, mas usando somente lula e camarão, já que não sou grande fã de mexilhão.
Para dar um toque especial, coloquei chorizo cortado em cubinhos. Além de adicionar sabor, o chorizo também ajuda a colorir o arroz.

Na falta de uma receita que me agradasse, juntei um pedacinho de uma, um detalhe de outra e uma pitada de intuição. Como também não tinha uma paellera, aquela panela específica para isso, usei duas frigideiras grandes que deram conta do recado muito bem. Como minha amiga convidada também gosta de botar a mão na massa, cada uma ficou responsável por uma panela e cozinhamos à 4 mãos e muito papo!

Fizemos assim:
- um pouco de chorizo cortado em cubinhos (100g?)
- 1 cebola picada
- 3 dentes de alho picados
- 1 pimentão vermelho em tiras
- 2 tomates picados (sem sementes)
- açafrão
- 1 lula média cortada em anéis
- 1/2 kg de camarão descascado (deixei 5 com casca para decorar)
- 250g de arroz para paella
- caldo feito com as cascas e cabeças dos camarões (uns 500ml)
- sal, pimenta, salsinha

- Comecei fritando o chorizo com um pouco de óleo, adicionando a cebola até ficar macia. Adicionei o alho até dourar um pouco. Depois o açafrão e em seguida o camarão descascado, para logo depois juntar o arroz.
- Deixei o arroz fritar um pouco, mexendo bastante para garantir que cada grão ficasse coberto com os tempeiros. Em seguida adicionei os tomates, mexendo bem até ficarem macios. Adicionei então um pouco do caldo do camarão e temperei com sal e pimenta. Deixei em fogo baixo para cozinhar o arroz. Se começar a secar e o arroz ainda estiver cru, adicione mais caldo.
- A lula entra quase no fim do cozimento, sendo misturada quando o arroz já está quase cozido mas ainda tem uma textura rígida. Não deve-se cozinhar muito a lula para não ficar borrachuda, 5 minutos são suficientes. Nessa hora os camarões decorativos podem ser colocados no topo da paella, virando quando já estiverem rosados na parte de baixo. Outra opção é fritá-los em uma frigideira separada e adicionar na hora de servir.
- Quando a textura do arroz estiver ok (macio porém firme) e a água praticamente seca, desligue o fogo e deixe descansar por uns 5 minuto, para que qualquer excesso de caldo seja absorvido. Na hora de levar à mesa, salpique salsinha ou cebolinha para dar um colorido especial e seções de limão para enfeitar e temperar.

Para ficar pronta, do preparo à mesa, não leva mais de 1 hora, não faz sujeira, não é difícil e fica uma delícia!!! Ótimo para um almoço de domingo com amigos e muita conversa boa! Adorei, tudo perfeito!




I was planning to make a barbecue but, as the forecast for the weekend was for rain in London, I put my plan B into action: Paella.

As I have never made this dish, I've done research to try and find a recipe that I liked. I found out that the Paella can be prepared by many ways, and ingredients vary a lot! I've decided to make the seafood version  but using only prawns and squid, as i'm not a big fan of mussels.
To give it a special touch I've added chorizo cut into small cubes. It adds flavour and also helps to coulour the rice.

As I haven't managed to find the very perfect recipe, I decided to mix details from one, bits of another and a bunch on intuition. As I also didn't have a Paellera, the authentic pan for preparing the dish, I used two large frying pans. As my friend/guest likes to cook as well, each one was responsible for one frying pan. We cooked by 4 hands and a lot of chat!

We made it like this:
- a little bit of chorizo (100g?)
- 1 chopped onion
- 3 chopped garlic cloves  
- 1 red pepper deseeded, in stripes
- 2 chopped tomatoes (deseeded)
- saffron
- 1 medium squid, cut in rings seasoned with salt and pepper and a bit of lemon
- 1/2 kg of peeled prawns (leave 5 with skin and head to decorate) seasoned with salt and pepper and a bit of lemon
- 250g of rice for Paella
- stock made with skins and head of prawns (about 500ml)
- salt, pepper, chopped parley as you wish

- I started frying the chorizo with a bit of oil for a while, and adding the onions until soft but not coloured. Then I added the saffron, stirring for 1 or 2 minutes before adding the peeled prawns. Mix it for about 3 minutes and add the rice.
- Keep mixing until you are sure that all rice grains are covered with flavours. Then add the tomatoes, stirring well until they are soft. Add a bit of stock (half), season with salt and pepper, stir and  leave it simmering until to cook the rice. If it starts to get dry and the rice is still raw, add more stock. Stir it every now and then to guarantee that it's not sticking at the pan.

- When the rice is almost cooked but still firm you can add the squid and mix it to the rice. You should not cook the squid for too long otherwise it's gonna taste like rubber. 5 minutes is enough. At this time you can add the decorative prawns on the top of the paella, turning it when it's pink at the bottom. Another option is to fry it in a separate frying pan and add before serving.

- When the rice texture is ok (soft but firm) and all the stock has dried, turn off the hob and leave it for about 5 minutes (preferentially covered) so any excess of stock would be absorbed. You must serve the dish on the pan you cooked, so just add some chopped parsley to give it some colour and lemon wedges to decorate and season.

The total cooking time (from preparation to the table) doesn't take more than 1 hour, it's not messy nor difficult and it is delicious! It makes a perfect sunday lunch with friends! I loved it, everything was perfect!
